Indulgence is as lactic set cheese with a natural rind. A slow-make technique develops a fine, close texture with a creamy, luscious fudgy feel that melts in the mouth. The centre has some firmness then gradually becomes soft and sticky towards the rind. The body is covered in a wrinkled, bloomy Geotrichum rind. Dairy & mineral flavours are a balance between sweet and sour, and a lasting spice on the palate. The earthy aroma is of the farm, reflecting the 100% pasture-fed organic diet of our single herd of mixed breed cows, grazed along Lance creek on our family farm in South Gippsland.
Indulgence can be enjoyed at any stage, from fresh & creamy (14 days), semi-matured like a ripe fig (3-4 weeks) or aged (2-3 months), when it develops a waxy-smooth, drier texture with concentrated flavours and a peppery finish.
Indulgence has amazing characteristics, controlled by the natural rind flora, which slowly draws moisture out of the cheese. This moisture should be allowed to escape unless you are looking for a more pungent cheese. For this to happen, wrap in waxed parchment.
Serve with fruit and Semillon-Sauvignon Blanc or dessert wines, depending on the age of the cheese, or an American-style pale ale.
